The art of T’ART: the concept
T’ART was born from a moment of courage, vision, and friendship. For chef Hugo, the journey began when Leni Charles of Kids of the Diaspora invited him to showcase his craft at a workshop. That experience, sharing desserts in a space that celebrated culture and creativity, made him realise it was time to create a brand that reflected his own vibe, vision, and voice.
The vision for T’ART was influenced by time spent in Lyon, London, and New York. In Lyon, the chef worked with Sébastien Bouillet, one of France’s most avant-garde pastry chefs, an experience that opened opportunities to later work in New York and London. Each city added its own impact: Lyon with precision and innovation, New York with boldness and diversity, and London with its energy and creativity.
The Creative Process
Hugo’s goal with T’ART is for people to feel joy when experiencing the desserts. His process balances classical French pastry training with a design-led approach. Ideas often begin as notes and reflections that develop over time into recipes and plated desserts. Hugo allows room for adjustments, recognising that art and taste are always evolving.
One creation that best represents T’ART is a citrus dessert centered around yuzu. As a favorite flavor of the chef, it showcases freshness, balance, and the brand’s design-forward approach.
Collaboration and Community
Collaboration has been important to the launch of T’ART. A key figure in this story is Jimmy of Jimmy’s Pop Up. After years of conversation, Jimmy provided encouragement and support to help bring the idea into reality. Launching within his latest South Bank Pop Up will give T’ART a unique platform, offering visibility, the chance to connect directly with new audiences, and an environment to experiment with ideas.
Looking Forward
T’ART is only at the beginning of its journey. Together with Jimmy, chef Hugo is developing ideas for the future and looks forward to sharing them when the time is right. Dream collaborations could include artists such as Damien Hirst or leading fashion designers, bringing new dimensions to the dialogue between food, art, and culture.
