About Hugo

Hugo Penel is a remarkably talented pastry chef whose career has taken him through some of the most inspiring kitchens in Lyon, London and New York. He trained under the avant-garde Sébastien Bouillet in France, honed his craft in the creative whirlwind of NYC with Dominique Ansel, and refined his artistry at London’s The Connaught alongside Hélène Darroze.

Blending classical French pastry technique with a contemporary, design-driven sensibility, Hugo creates desserts that are as visually striking as they are unforgettable in flavour. Meticulous and imaginative, he allows ideas to develop organically before perfecting each detail.

His natural eye for design, detail, and art is further sharpened by his passion for photography and interest in technology - influences that give T’ART its modern identity and distinctive edge.

The creation of T’ART

The spark for T’ART began when his friend Leni Charles, founder of Kids of the Diaspora, invited him to showcase his work during a creative workshop. This was a turning point and he realised he could bring together his two great loves - food and art - to create something unique. T’ART is a reflection of Hugo’s world: a place where pastry, design and storytelling meet. With Jimmy’s support and the stage of our South Bank pop-up, the concept has grown from the first conversation into a fully fledged launch - a perfect blend of timing, trust and creativity.

At the heart of T’ART is a commitment to flavour, quality and craft. Hugo sources the best ingredients he can find, whether that’s vibrant seasonal fruit or rich chocolate, and treats each element with care and precision. The flavours are clean and balanced, letting the ingredients speak for themselves, but always presented in a way that captures Hugo’s artistic flair. Every tart is designed to offer more than just a bite to eat - it’s an experience. Only the best makes it into a T’ART creation. Hugo’s approach is rooted in seasonality and locality, partnering with artisan suppliers who share his commitment to quality.

Hugo is constantly refining his craft, exploring new flavour combinations, and pushing the boundaries of patisserie. Vegan options, crafted with the same creativity and precision, will soon join the collection, ensuring T’ART remains as inclusive as it is innovative.

T’ART will launch at Ten, our South Bank pop-up bar, serving Hugo’s artfully crafted tarts in one of London’s most dynamic riverside settings.

Both Ten and T’ART prioritise seasonal, locally sourced ingredients and sustainable practices, creating a collaboration where exceptional pastry meets a commitment to quality, flavour, and responsible sourcing.

This partnership creates a space where guests can enjoy exceptional pastry alongside expertly crafted drinks.

Ten, located on the banks of the River Thames at the Southbank Centre is a pop up cocktail bar serving only the finest drinks sourced locally in London.
