Behind the flames: yes Chef Heidi

This summer marks our eighth year of serving up bold, smoky, and unforgettable flavours at this iconic riverside location. Curated by Head Chef Heidi Stiller and Founder Jimmy, this year’s tasting menu is a journey of taste, creativity, and the joy of cooking over flames.

Heidi began her journey with Jimmy’s Pop in our street food kitchen, where her talent and personality quickly stood out. Through dedication, creativity, and a natural flair for cooking on the BBQ, she rapidly progressed through the ranks and now leads our culinary team as Head Chef, driving innovation across our menus.

It all began with a shared vision. Working together with Heidi is our founder Jimmy, whose boundless creativity and vivid imagination always push the boundaries. With Jimmy’s knack for thinking outside the box and Heidi’s unwavering dedication to perfecting flavour, this dynamic duo has spent countless hours experimenting, tasting, and fine-tuning each dish to ensure that each ingredient truly shines. 

Fresh from her 16th visit to Thailand, Heidi returned brimming with inspiration. Her deep love for the country’s vibrant flavours and rich culinary culture has influenced several standout elements on this year’s menu, which we will go into more detail about in the upcoming feature stories.

Chef Heidi is known not only for her exceptional cooking skills but also for her unwavering commitment to connecting with diners throughout the cooking process. As she prepares each course, Heidi takes the time to talk through every element, what’s being cooked, where it comes from, and why it was chosen, inviting guests into the story behind the food. She shares the same passion for storytelling through food as founder Jimmy, creating dishes that are rich in meaning as well as flavor. Her deep knowledge is matched by a warm, bubbly personality that makes her as delightful to spend time with as the dishes she serves. Heidi turns every meal into a shared experience that celebrates both flavour and conversation.
